Product Details
Azmera White Teff Flour is made from finely milled whole-grain white teff, an ancient grain traditionally enjoyed throughout Ethiopia and Eritrea. Compared with darker varieties of teff, white teff has a milder flavor with a subtle natural sweetness, making it particularly versatile for recipes where you want the nutritional qualities of teff without an overly pronounced grain flavor.
Its best-known traditional use is injera, the soft fermented flatbread central to Ethiopian and Eritrean cuisine. Beyond injera, its fine texture and gentle flavor work well in pancakes, muffins, breads, cookies, crepes, and other gluten-free baking applications.

How to Use
For Traditional Injera: Mix white teff flour with water to form a pourable batter. Allow the batter to ferment at room temperature for approximately 2–3 days. Pour onto a hot, flat non-stick griddle in a circular motion, cover briefly, and cook until the surface is set and characteristic holes have formed.
For Pancakes & Baking: Add white teff flour to pancakes, muffins, cookies, cakes, breads, or crepes. When adapting wheat-flour recipes, start by replacing a portion of the regular flour with teff and adjust liquids as necessary because teff behaves differently from wheat flour.

Store in a cool, dry place away from direct sunlight, heat, and moisture.
After opening, keep the flour tightly sealed or transfer it to an airtight food-safe container.
